This halibut fish curry is a vibrant, modern take on traditional coastal Indian fish curries, featuring tender seared halibut simmered in a deeply spiced, yogurt-enriched tomato masala sauce.

A Rich Culinary History

  • Coastal Roots: Fish curries have been an essential staple of India’s extensive coastal regions—particularly in Goa, Malabar, Kerala, and Bengal—for thousands of years. Early inhabitants relied on native spices like turmeric, ginger, and wild peppercorns, pairing them with fresh catches, local coconut, or regional tamarind and sour fruits to preserve and flavor the fish.

     

  • The Tomato & Chili Evolution: The dish’s distinctive reddish hue and tangy depth trace back to the 16th century, when Portuguese traders introduced New World ingredients—specifically chili peppers and tomatoes—to Indian ports like Goa. Over time, these imported goods became integral to traditional masala bases across the subcontinent.

     

  • Yogurt & North-South Fusion: While Southern Indian fish curries frequently feature rich coconut milk or sour kokum bases, this specific recipe incorporates marinated fish and yogurt—a technique deeply rooted in Mughlai and Northern Indian cooking traditions. Combining yogurt with warm aromatics like garam masala, cumin, and ginger creates a velvety, well-balanced sauce that complements delicate fish without overpowering it.

This dish pairs well with:

  • Brown Rice: Serves as a hearty grain to soak up the creamy, spiced tomato masala sauce.

  • Warm Whole-Grain Naan: Perfect for scooping up the sauce and tender seared halibut.

Spiced Halibut with Masala Sauce

Ingredients

    • 1.5 lbs Halibut fillets, cut into 1.5-inch skinless cubes (Mahi Mahi is a good substitute if you cannot find halibut)

    • ½ cup Plain Greek yogurt, (2% or whole milk works best)

    • 1 tbsp Lemon juice

    • 1 tbsp Fresh ginger, minced

    • 3 cloves Garlic, minced

    • 1 tsp Garam masala

    • 1 tsp Ground cumin

    • ½ tsp Ground turmeric

    • ½ tsp Kashmiri chili powder, (or mild paprika)

    • ½ tsp Kosher salt

    • 1 tbsp Avocado oil or ghee

    • 1 large Yellow onion, finely chopped

    • 1 tbsp Fresh ginger, minced

    • 4 cloves Garlic, minced

    • 1 tbsp Garam masala

    • 1 tsp Ground coriander

    • 1 tsp Ground cumin

    • ½ tsp Kashmiri chili powder

    • Optional: 8 Ounces of Canned Chickpeas

    • 1 can Crushed tomatoes, (14 oz / 400g)

    • ½ cup Low-sodium vegetable or fish stock

    • ⅓ cup Plain Greek yogurt, (room temperature, to finish)

    • Fresh cilantro, chopped for garnish

    Directions

    1. Marinate the Halibut: In a medium bowl, whisk together the Greek yogurt, lemon juice, ginger, garlic, garam masala, cumin, turmeric, chili powder, and salt. Gently toss the halibut cubes in the mixture until evenly coated. Set aside at room temperature for 15–20 minutes.

    2. Sear the Fish: Heat 1 tablespoon of oil in a large skillet or Dutch oven over medium-high heat. Carefully add the fish in a single layer (shake off excessive excess marinade). Cook for 2 minutes per side until lightly browned. The fish does not need to be fully cooked through yet. Transfer the halibut to a plate and set aside.

    3. Build the Aromatics & Spices: In the same skillet over medium heat, add a splash of oil if needed and add the finely chopped onion. Cook for 5–7 minutes until soft and golden. Stir in the ginger and garlic and cook for 1 minute until fragrant. Add the garam masala, coriander, cumin, and chili powder, tossing continuously for 30 seconds to toast the spices. Optional: Add the canned chickpeas for additional texture

    4. Simmer the Sauce: Pour in the crushed tomatoes and vegetable stock. Scrape up any browned bits stuck to the bottom of the pan. Bring the sauce to a gentle simmer, lower the heat, and cook uncovered for 8–10 minutes until the sauce thickens and deepens in color.

    5. Combine and Finish: Remove from heat before stirring in yogurt to prevent curdling. Turn off the heat. Stir in the ⅓ cup room-temperature Greek yogurt until smooth. Gently fold the seared halibut and any resting juices back into the pan. Return to low heat for 2–3 minutes just to warm the fish through and flake easily with a fork. Garnish with fresh cilantro and serve with brown rice or warm whole-grain naan.
