Homemade Potato Bread

Ingredients

  • ¾ cup warm water (110°F/45°C)

  • 3 cups white bread flour
  • 1-½ Tbsp dry milk powder

  • 1-½ Tbsp sugar

  • 1-½ tsp salt

  • 3 Tbsp potato flakes

  • ½ cup sour cream

  • 3 tsp active dry yeast

Directions

  1. Activate Yeast: Mix warm water, sugar, and yeast in a bowl. Let it sit until frothy (about 5-10 minutes).
  2. Combine Dry Ingredients: In a large bowl, mix flour, potato flakes, dry milk, and salt.
  3. Mix Dough: Add yeast mixture and sour cream to the dry ingredients. Stir until a dough forms.
  4. Knead: Knead on a floured surface for 8-10 minutes until smooth.

  5. Rise: Place in a greased bowl, cover, and let rise until doubled (about 1-1.5 hours).
  6. Shape and Proof: Punch down the dough, shape into a loaf, and place in a greased loaf pan. Cover and let rise again for 30-40 minutes.
  7. Bake: Preheat oven to 375°F (190°C). Bake for 30-35 minutes or until golden brown and sounds hollow when tapped.
  8. Cool: Let cool on a wire rack before slicing.
