⅓ Cup vegetable shortening
- 1 cup brown sugar
- 1 large egg
- 1¼ cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ¼ Cup milk
- 1 cup oatmeal flakes
- ½ cup raisins
- ½ cup chopped walnuts
Directions
Preheat your oven to 375°F (190°C).
- In a large mixing bowl, beat the shortening and brown sugar together until the mixture is light and fluffy. Beat in the egg until smooth and well combined.
- In a separate bowl, sift the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing thoroughly with a wooden spoon or hand mixer.
- Stir in the milk, then fold in the oatmeal, raisins, and walnuts, ensuring they are evenly distributed throughout the batter.
Drop small spoonfuls of batter onto un-greased cookie sheet(s), spacing them about 2 inches apart. (this should yield 24 small cookies)
Bake for 10 to 12 minutes or until the edges are lightly golden.
- Remove the cookies from the oven and transfer them to wire racks to cool completely.
