First appearing in 19th-century American cookbooks, popovers were inspired by Yorkshire puddings but adapted to suit local ingredients and tastes.
Traditionally made from a simple batter of eggs, milk, flour, and salt, popovers are baked in a special pan that allows them to rise dramatically in the oven. Their name comes from the way the batter "pops over" the edges of the pan during baking.
Versatile and delightful, popovers can be enjoyed with sweet toppings like butter and jam or paired with savory dishes such as soups and roasts. This recipe captures their timeless appeal, bringing a touch of history and light, fluffy perfection to your table.

4 large eggs

1 1⁄2 cups whole milk

1⁄2 teaspoon salt

1 1⁄4cups all purpose flour

4 tablespoons vegetable oil (or beef drippings)
Directions
- Prepare the Batter: Combine the eggs, milk, flour, and salt in a blender. Blend until smooth and well mixed. Refrigerate the batter for at least 30 minutes to rest, or until ready to use.
- Preheat the Oven: Preheat the oven to 425°F (220°C).
- Heat the Oil: Add 1 teaspoon of oil or beef drippings to each section of a 12-hole Yorkshire pudding or muffin tray. Place the tray on the top shelf of the oven and heat until the oil is very hot and almost smoking.
- Fill the Tray: Carefully remove the tray from the oven and immediately pour the batter into each section, filling them three-quarters full. The batter should sizzle on contact. Quickly return the tray to the oven.
- Bake: Bake for 15–20 minutes, or until the puddings are well-risen, golden brown, and crisp. Do not open the oven door during baking to prevent them from collapsing.
- Serve Immediately: Enjoy the puddings straight from the oven for the best flavor and texture.
