Ingredients

2 cans (15 ounces each) black beans (undrained).

2-3 tablespoons of taco seasonings

8 small crunchy taco shells
- 1 cup diced onions
- 1 cup sour cream

Shredded Cheese
- 1 cup shredded lettuce
- Avocado slices
- Chopped cilantro

Directions
Prepare the Black Bean Filling:
In a pot, stir in black beans (including liquid from the cans) and taco seasoning. Bring to a boil then let simmer for 15-20 minutes stirring frequently, allowing the flavors to meld and until the liquid starts to thicken.
Assemble the Tacos
Warm the crunchy taco shells according to the package instructions.
Spoon the black bean filling into each taco shell.
Top with diced onions, a dollop of sour cream, shredded cheese, and shredded lettuce.
Optional Toppings
Garnish with avocado slices and chopped cilantro.
Serve
- Arrange the assembled tacos on a platter.
