Coconut beans and rice is a light side dish that packs lots of flavor from the coconut milk and green onions. Drizzle fresh squeezed lime juice for an added boost of flavor.
Coconut Beans and Rice
1 cups cold water
1 cups coconut milk
1 cup basmati or jasmine rice
1 cup rinsed and drained canned kidney beans
1/2 bunch green onions, finely chopped
Rinse rice in a colander with water to remove startch and debris
Put the cold water and coconut milk in a saucepan and bring to a simmer
Add rice and cook according to the pack instructions until the liquid has been absorbed
Stir in the kidney beans and finely chopped spring onions
Serve with one sliced spring onion and lime wedges to squeeze over the dish
Rinsing rice removes debris and starch that can cause the rice to clump together as it cooks.
