Crispy Pork Carnitas
Ingredients
- 4-5 lb pork shoulder (cut into 2-inch chunks).

1 onion (quartered), 4–6 cloves of garlic (smashed), 2 bay leaves.

Juice of 2 oranges (toss the spent peels in too!), juice of 1 lime.
The Spice Rub

1 tbsp Kosher salt

1 tsp Black pepper

2 tsp Dried oregano (Mexican oregano is best)

2 tsp Ground cumin
- 1 tsp Chili powder
Directions
Rub the pork chunks thoroughly with the spice mix. Place them in your slow cooker or a heavy Dutch oven. Add the onion, garlic, bay leaves, and pour over the orange and lime juice.
The Slow Braise
If Using a Slow Cooker: Cook on Low for 7-8 hours or High for 4-5 hours until the meat pulls apart easily with a fork.
If Using a Dutch Oven: Add about 1/2 cup of water or chicken broth. Cover and bake at 300°F (150°C) for about 3 to 3.5 hours.
