This country style breakfast pizza combines everything you love about a hearty weekend skillet into a crisp, golden hand-held slice. Built on a lightly par-baked crust, it replaces traditional marinara with a velvety homemade black pepper country sausage gravy. Piled high with melted sharp cheddar, mozzarella, and smoky thick-cut bacon, each slice centers around a sunny, jammy-yolked egg baked directly into the pie. Finished with crisp scallions and a pinch of chili flakes, it is the ultimate centerpiece for brunch gatherings, lazy Sunday mornings, or game-day breakfast spreads.
Directions
Preheat the Oven:
- Preheat your oven to 475°F (245°C). If using a pizza stone or steel, place it on the center rack for at least 30 minutes.
Make the Sausage Gravy Base:
- In a skillet over medium heat, brown the sausage, breaking it into small crumbles, until cooked through (5–6 minutes). Sprinkle the flour over the meat and fat; stir and cook for 1 minute to remove the raw flour taste. Slowly pour in the whole milk while stirring constantly. Simmer gently for 2–3 minutes until thick and spreadable. Remove from heat and season with black pepper and salt. Let cool slightly.
Shape and Pre-Bake the Crust:
- Stretch or roll the dough into a 12- to 14-inch round on a piece of parchment paper lightly dusted with cornmeal. Brush the edges with olive oil. Dock the center of the dough lightly with a fork to prevent large air bubbles. Par-bake the crust alone for 4–5 minutes until just beginning to set but not yet browned.
Assemble the Toppings:
- Spread the warm sausage gravy evenly over the par-baked crust, leaving a ½-inch border. Scatter half of the cheddar and mozzarella mixture over the gravy, followed by the chopped bacon. Use the back of a spoon to create 4 shallow wells in the cheese layer where each egg will sit.
Add Eggs and Final Cheese:
- Crack 1 egg into each indentation. Sprinkle the remaining shredded cheese around the egg whites, leaving the yolks exposed.
Bake and Finish:
- Slide the pizza back into the oven and bake for 8–11 minutes, until the crust is golden-brown, the cheese is bubbling, and the egg whites are completely opaque with soft, jammy yolks. Remove from the oven, garnish immediately with sliced scallions and red pepper flakes, slice, and serve hot.
