This hearty skillet dish combines tender diced potatoes, savory ground beef, black beans and aromatic onions, all seasoned to with taco seasoning. Ingredients
- 2 cups diced potatoes (about 2 medium potatoes)
- 1 small onion, diced

1 lb plant based ground

2 tablespoons of taco seasoning (yes…taco seasoning)

2 tablespoons olive
- Chopped fresh parsley for garnish (optional)

½ can of black beans drained
Directions
- Heat olive oil in a large skillet over medium heat.
- Add the diced potatoes to the skillet and cook until they start to brown and soften, about 8-10 minutes. Stir occasionally to ensure even cooking.
- Once the potatoes are slightly tender, add the diced onion to the skillet. Cook for an additional 3-4 minutes until the vegetables are softened.
- Push the potatoes, onions, and bell peppers to one side of the skillet and add the plant based grounds to the empty side. Cook the ground beef, breaking it apart with a spatula, until it is fully cooked and browned.
Once the plant based ground is cooked, combine it with the potatoes, onions and black beans in the skillet. Stir well to mix all the ingredients together.
- Add the taco seasoning to the skillet. Stir to evenly distribute the seasonings.
- Continue cooking the hash mixture for another 5-7 minutes, or until everything is well heated through and the flavors have melded together.
- Taste and adjust seasoning and add salt and/pepper if necessary.
Recipe Note
Serve the corned beef hash hot, garnished with chopped fresh parsley if desired.
