- 1 Jalapeño pepper
- 1/4 cup chopped onion
- 5 cherry tomatoes
- 1/4 cup unsalted black beans
- 5 large egg whites
- 2 10 inch tortillas

1 teaspoon taco seasoning
- 1/3 cup shredded pepper jack cheese
- 1 medium avocado
Directions
- Sauté green chilies, and onions
- Add cherry tomato halves and black beans to the sauté
- Scramble in egg whites to the sauté until eggs are cooked fluffy
Sprinkle the scramble with taco seasoning and stir till well blended
- Sprinkle shredded pepper jack cheese over the scramble
- Warm tortillas and slice avocado
- Wrap the egg scramble and sliced avocado in the tortillas
