Plantains are also known as “Cooking Bananas”. They are not as sweet and are more starchy as “regular” bananas and make a great side dish for BBQ or any savory and/or spicy dish.

Ingredients
- 4 very ripe plantains (brown in color, some yellow, no green)
- 1 tablespoons unsalted butter
- 3 tablespoons honey, maple syrup or agave

2 tablespoons Brew and Feed Ember Dust Smoky Molasses Rub
Directions
- Preheat grill to medium high with indirect heat
- Carefully cut the ends off the plantains and run your knife down the back of the plantain
- Peel back the thick skin to expose the flesh
- Completely peel the plantains and cut into 1/2 inch slices
- In a bowl, combine plantains and Brew and Feed Smoky Molasses Rub, mix together, coating all plantain pieces with the seasoning
- Loosely wrap the plantains and butter in foil creating a foil packet. Seal foil edge
- Place the packet on the grill and cook for 20-25 minutes, turning once during cooking time
- Check for doneness, plantains should have some caramelization and be fork tender
Remove from grill and arrange on a platter, drizzle with honey, maple syrup or agave syrup and serve warm
