2 (4-ounce) high-quality tuna steaks

Extra-virgin olive oil

2 tablespoons Brew and Feed Espresso Rub

1 tablespoon freshly ground black pepper

1 teaspoon sea salt
-
½ teaspoon ground cinnamon
-
½ teaspoon chili powder
-
16 ounces snow peas
Directions
Prepare the quinoa per the package instructions
Brush the tuna steaks with olive oil.
In a small bowl, combine the coffee, pepper, salt, cinnamon, and chili powder.
Sprinkle the espresso coffee mixture over both sides of the tuna steaks and let them rest, bringing them to room temperature, for about 30 minutes.
Brush the tuna steaks with more olive oil. In a medium skillet, sear the tuna on both sides over high heat until a crust forms and the fish reaches your preferred doneness, 2 to 3 minutes per side for rare. Serve hot.
