Ingredients
- 2 cups all-purpose flour

1 tbsp baking powder (not needed if using self rising flour)

1/2 tsp salt (not needed if using self rising flour)
- 1/2 cup cold unsalted butter (cubed)
- 3/4 cup cold buttermilk
- 4 slices turkey bacon
- 4 large eggs
- 4 slices American cheese
- 1 tbsp butter (for cooking eggs)
- Salt and pepper (to taste)

BISCUITS
- Prepare the Biscuits (if using homemade):
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- Cut in the cold butter using a pastry cutter or your hands until the mixture resembles coarse crumbs.
- Gradually stir in the cold buttermilk, mixing just until the dough comes together.
- Turn the dough onto a floured surface, gently pat it into a 1-inch thick rectangle, and fold it over 3 times.
- Cut out biscuits using a round cutter and place them on the baking sheet.
- Bake for 12-15 minutes, or until the tops are golden brown. Let them cool slightly.
COOK BACON
- Heat a skillet over medium heat.
Add the turkey bacon slices and cook for 2-3 minutes on each side or until crispy. Remove from the pan and set aside.
COOK EGGS
- In the same skillet, melt 1 tbsp of butter over medium heat.
- Crack the eggs into the pan, cooking them to your preferred doneness (scrambled or fried).
- Season with salt and pepper. Set aside.
ASSEMBLE THE BISCUITS
- Split the biscuits in half.
- Layer each with a slice of turkey bacon, cooked egg, and a slice of American cheese.
- Place the top of the biscuit back on and serve immediately.
