Ingredients
- 4 boneless, skinless chicken breasts

8 slices of bacon

2 cups sliced mushrooms

2 cups shredded Monterey Jack cheese

- 1/2 cup mayonnaise

2 tablespoons Dijon mustard

2 tablespoons honey

1 tablespoon lemon juice

1/2 teaspoon garlic powder

Honey Mustard Sauce
Directions
Prepare the Chicken
Preheat your grill to medium-high heat.
Season the chicken breasts with salt and pepper.
Grill the chicken breasts for about 6-8 minutes per side, or until they are fully cooked through and have nice grill marks. Remove from the grill and set aside.
Cook the Bacon and Mushrooms
In a skillet over medium heat, cook the bacon until crispy. Remove the bacon from the skillet and drain it on paper towels. Crumble the bacon into small pieces and set aside.
In the same skillet with the bacon drippings, add the sliced mushrooms. Cook until the mushrooms are tender, about 5-7 minutes. Remove from heat and set aside.
Prepare the Honey Mustard Sauce
In a small bowl, whisk together the mayonnaise, Dijon mustard, honey, lemon juice, garlic powder, salt, and pepper until well combined. Adjust the seasoning according to your taste preferences. Set aside.
Assemble the Chicken
Preheat your oven's broiler.
Place the grilled chicken breasts on a baking sheet lined with foil.
Spread a generous amount of the honey mustard sauce over each chicken breast.
Top each chicken breast with a portion of the cooked mushrooms, followed by the crumbled bacon.
Sprinkle the shredded Monterey Jack cheese evenly over the tops of the chicken breasts, followed by the shredded cheddar cheese.
Broil the Chicken
- Place the baking sheet under the broiler and broil for 2-3 minutes, or until the cheese is melted and bubbly.
Keep an eye on the chicken to prevent burning.
Serve
- Once the cheese is melted and bubbly, remove the baking sheet from the oven.
