Overnight Breakfast Sausage Casserole

A breakfast casserole is an easy way to feed multiple people a full and hearty breakfast with not a lot of effort or a lot of dishes to clean. Humans have been baking food for thousands of years and the casserole is just an evolution of this practice. In the United States a casserole is typically made with three components: A protein like meat, fish, or beans, chopped vegetables and a binder like eggs, flour, potatoes or pasta. Toppings like breadcrumbs and cheese are also popular.

Overnight Breakfast Sausage Casserole

Ingredients

  • 1 pound ground breakfast sausage (or vegan equivalent), BROWNED AND DRAINED

  • 1 cup shredded sharp cheddar cheese (or vegan equivalent)

  • 6 eggs, lightly beaten (or an equivalent amount of egg whites)

  • ¼ cup of butter (melted)

  • 2 cups milk (or vegan equivalent)

  • 1/2 teaspoon dry mustard

  • 1/2 teaspoon salt (optional depending on the salt content of the sausage and cheese you use.)

Directions

  1. Spread sausage in bottom of 12 X 8 X 2-inch baking dish and sprinkle with cheese.

  2. Combine eggs, milk, butter, dry mustard and salt in a bowl and pour over sausage and cheese then refrigerate overnight.

  3. Heat oven to 400°F. Bake casserole for 35 minutes or until set.
