Ingredients

1 tbsp olive oil

2-3 lbs oxtails

salt and pepper to taste

1 red onion diced

3 cloves garlic minced

1 tsp oregano

1 tsp thyme

1 cup red wine

3 tbsp tomato paste

2 1/2 cups beef broth
-
2 bay leaves
Directions
Heat a heavy pot to medium heat and add olive oil. Season oxtails with salt and pepper and brown on all sides (10-12 minutes) and set aside.
Add onion and garlic to the same pot and cook until soft and season with oregano and thyme.
Stir in tomato paste and wine and let the wine reduce by half (about 5 minutes).
Put the oxtails in the slow cooker along with the onion and wine sauce mixture.
Add broth and bay leaves to the slow cooker. Cover and set the timer for 4 hours on high or 8 hours on low heat.
