Ingredients
- 1 pound shrimp (peeled and deveined)

1 Tablespoon extra virgin olive oil

6 cloves garlic (thinly sliced )

2 Tablespoons tomato paste
-
10 ounces cherry tomatoes (halved)
- 1/3 cup white wine or dry vermouth
-
½ teaspoon red pepper flakes
-
2 limes (zested and juiced )
- 1/2 cup chopped basil
- 4 Tablespoons butter
-
Kosher salt
-
Ground black pepper
Directions
BOIL THE PASTA
Cook the squid ink pasta in a pot of salted boiling water. Reserve ½ cup of the pasta cooking water and drain the pasta.
MAKE THE PASTA SAUCE
Heat the olive oil in a large pan on medium-high heat until hot.
Cook the garlic for 1 minute until lightly browned.
Add the tomato paste and cook while stirring for 1 minute.
Add the tomatoes, wine, water and red pepper flakes and season with salt and pepper.
Cook for 3 to 5 minutes, until tomatoes are softened.
COOK THE SHRIMP & PREP THE DISH
Add shrimp and cook for 2 to 3 minutes, until cooked through.
Add the cooked pasta, butter, lemon zest, lemon juice and the reserved pasta cooking water. Cook for 2-3 minutes while stirring to coat the pasta with the sauce.
Add the basil and serve.
